A Creamy Vegan Dressing Made with Cold-Pressed Walnut Oil

Rich, smooth and flavoured, this dairy-free vegan Walnut oil dressing is made with simple, everyday ingredients and features Natura Harmony Walnut Oil. Perfect for crisp salads, roasted vegetables or as a dip for warm sourdough, this plant-based staple belongs in every vegan kitchen.
Ingredients
- 3 tablespoons Natura Harmony Walnut Oil
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1 teaspoon soft brown sugar (or maple syrup if available)
- 1 small garlic clove, grated or finely chopped
- 1 pinch sea salt
- Freshly ground black pepper
- 1 tablespoon cold water (optional, to adjust thickness)
Method
No special equipment needed – just a bowl and a fork or whisk.
- Add lemon juice, mustard, sugar, garlic, salt, and pepper to a small mixing bowl.
- Whisk well, then gradually pour in the walnut oil while continuing to whisk until smooth and creamy.
- If the texture is too thick, stir in a tablespoon of cold water.
- Taste and adjust – more lemon for brightness, more sugar to soften the edge of the mustard.
- Store in a sealed glass jar in the fridge for up to 3 days.

- Crisp lettuce, rocket, cherry tomatoes and roasted chickpeas

- Use as a glaze for grilled courgettes or aubergines
- Serve with steamed new potatoes and fresh herbs

Bread and Grains
- As a dip for sourdough or rye crackers
- Toss with bulgur, couscous, or quinoa
- Add to wraps with falafel, hummus and shredded veg

For variation, try it with Natura Harmony Hazelnut Oil for a roasted flavour, or Sesame Oil for a savoury, slightly toasty finish.
